Grilled Strawberry and Caramel S’mores

Classic S’mores with a twist. These Grilled Strawberry and Caramel S’mores are made with tennis biscuits, Rolos, marshmallows, and fresh strawberries. These are even better to make at the end of a braai, for you need low heat.


20 Tennis or Marie biscuits
10 Marshmallows
10 Rolo chocolates (You can double the amount if you’d like)
250g Strawberries – Cleaned, hulled & sliced


  • Ensure your coals are at low heat. See Notes below how to test your braai’s temperature without using a thermometer.
  • Place half of the biscuits in a shallow tin foil pan. (Keep the rest of the biscuits aside for now)
  • Place a Rolo (or 2) on each biscuit and place it on a grid over your low heat coals. The chocolate should only take a few minutes to melt, depending on your grid and the heat,  it will take anywhere from 5 to 8 minutes.
  • While the chocolate is melting, place the marshmallows on skewers. Cook them on the other side of the braai. Spin them slowly so that they toast evenly on all sides.
  • Once the chocolate is melted and the marshmallows toasted, it’s ready to be assembled.
  • Place biscuit bottom with melted Rolo on a plate. Top each one with a toasted marshmallow, then place 4 to 6 strawberry slices on top of the marshmallow. Finally top with another biscuit and press down slightly.
  • You’re decadent Grilled Strawberry & Caramel S’mores are now ready to be feasted on. Bon appe’sweet!
