Snoek jaffles

A nice variation on the traditional snoek salad.

Ingredients:

Snoek Salad

  • 400g Smoked snoek, flaked and bones removed
  • 1 Cup cooked mielies
  • 6-8 Dried apricots, chopped
  • 1/4 Cup roasted peanuts
  • 2 Spring onions, chopped
  • 1/2 Chopped red onion
  • Handfull of chopped cortiander leaves

Mustard salad dressing

  • 1 Cup mayonnaise
  • 1 Cup full cream yogurt
  • 1/2 Cup wholegrain mustard
  • 2 Tsp mustard powder
  • 2 Tsp chopped garlic
  • 1 Tbs grated ginger
  • 2 Tbs honey
  • Juice and grated rind of one lemon

Method:

Jaffles

  • Spread 8 slices of white bread with butter.
  • Mix all the ingredients for the mustard salad dressing.
  • Mix 1 cup snoek salad with 3 tbs mustard salad dressing.
  • Spread 3 tbs snoek mixture on a slice of bread.
  • Slice one red onion into thick slices. Place an onion ring in the jaffle pan and place the snoek sandwhich on top.
  • Fry on medium heat till golden.
